Chin Chin to Friday! I would be lying if I told you that I didn’t will this week away. It was a tough one, but I’ve promised myself that I will no longer will time away, no matter how difficult the challenges I’m facing are. So, here’s to this weekend and embracing every moment, let’s raise a glass of champagne to that! (Oh and to my Oat Groats Cereal!)
I made cereal, a very very healthy cereal! This cereal is so easy. It requires only a few natural ingredients. I used Organic Oat Groats that I purchased from Whole Foods Bulk Bins (This is an incredibly economic way to buy organic dry goods). What are oat groats you ask? Well, oat groats are whole minimally processed oats, thus they are high in nutritional value. It’s important to soak your groats overnight to soften them, don’t forget this step, they need to be softened.. trust me! (HA!). Once they’ve been soaked, drained and rinsed (you’ll want to rinse the excess starch off). Now it’s time to flavor up your groats!
I used a mixture of Organic Coconut Nectar (low on the glycemic index!), Maple Syrup to sweeten the groats and cinnamon and nutmeg to flavor. Lastly, I roasted the groats in the oven for 40min. at 200 degrees fahrenheit. It’s super easy and wickedly delicious! Get the full recipe below!

Breakfast Oat Groats Cereal
6 cups Organic Oat Groats, soaked overnight
1/4 cup Organic Coconut Nectar
1/4 Maple Syrup
3 tbsp Cinnamon
2 tbsp Nutmeg
Pinch of Salt
Preheat oven to 200 degrees Fahrenheit
Drain and rinse groats
Transfer groats into a bowl, mix in coconut nectar, maple syrup, cinnamon and nutmeg
Spread a thin layer of groats out onto lined cookie sheet
bake for 40 min.
Serve with organic almond milk, chia seeds and raw shelled hemp seeds!
