Corned Beef and Cabbage Dip

A fun twist on the traditional corn beef and cabbage.  I ‘m always looking for an excuse to eat and celebrate.  Although Saint Patrick’s Day is not known for its food, we all know that a little bit of hardy substance can do a body good during this holiday.  This Corned Beef and Cabbage dip is the perfect accompaniment to your Saint Patrick’s Day celebration.  Poor yourself a green beer and dive right into a new and progressive way to eat Corned Beef and Cabbage. 

Hi all, I’m back.  It’s been a second since I’ve come by to say Hi.  I don’t want to go into too much detail here, but I just want to thank everyone for all their support.  A more robust post will be up in the coming weeks, so I’ll go into more detail then.

With that, let’s talk about this dip.  Let me be honest here, I don’t love traditional Corned Beef and Cabbage.  The meat is too fatty for me and boiled cabbage just smells!  You know what I’m talking about, right?  It’s also not that easy to bring to a party.

I wanted to develop a recipe that was easy, festive and party friendly since Saint Patrick’s Day lands on a Saturday this year.  It’s also a great last minute item to bring to a party or a potluck.  Serve this dip with the following things:

  • Crackers (I like these)
  • Chips
  • Crusty Bread
  • Hawaiian Rolls
  • Celery and Carrot Sticks

Instructions
  1. Preheat oven to 375 degrees fahrenheit.
  2. Place potatoes into a cheese cloth or a few layers of paper towels and squeeze out all the excess water.
  3. In a large nonstick skillet, brown cabbage and potatoes in olive oil and butter, salt and pepper for taste, allow to cool to room temperature.
  4. In a large bowl combine 1/2 the swiss and mozzarella cheese with the cream cheese, sour cream and corned beef. Stir in cabbage and potato mixture.
  5. Transfer into an oven safe baking dish and bake for 35-45 minutes until bubbly and hot. Sprinkle the remaining cheese on top and continue baking until golden brown.
  6. Allow to cool slightly, serve hot.
