Vegan Sweet Potato and Tofu Tacos

Taco Tuesday is a religion in our house! Tacos are one of my favorite food groups, second to Champagne (Ha!). S and I try not to eat too much meat, limiting it only to two or three times a week, so I love creating different vegan or vegetarian recipes that keep things interesting for my carnivorous husband.

These tacos were a winner (I instagrammed a picture of them last week). The seared tofu and kale added some texture to the tacos and the mashed sweet potatoes gave it a nice creaminess.

Ingredients

Instructions
  1. Season Tofu with S&P and pan-fry on high until slightly golden on both sides in 2 tbsp of coconut oil. Remove from pan
  2. Add 1 tbsp of oil, add carrots and onions and sauté on high for two min. add vinegar and stir
  3. Mix in sweet potatoes and mash
  4. Mix in water, green chiles, and kale.
  5. Cook for 5 to 10 minutes until ingredients are combined and kale has wilted slightly
  6. Add red chili pepper flakes
  7. Warm taco shell and build tacos!
  8. Start by spreading the sweet potato mixture on the bottom, layer three slices of tofu on top and finish with pico de gallo!
  9. ENJOY!
